For those of you who are not familiar with Japanese chef knives, the Deba is a fillet knife used to chop and of course fillet fish. It is designed primarily to slide against fish bones as well as to fillet and to cut fish heads without damaging the produce. Is a Deba the right chef knife for you?

This knife is one oriented towards a very specific task. We suggest that if you don’t work with fish regularly to stay away from the Yoshihiro Shiroko Kasumi Deba 6.6″. If you you are looking for a more versatile kitchen knife you are definitely better off investing in other Japanese kitchen knives brands like either the Misono Ux10 Gyutou kitchen knife, the Yoshihiro Blue Steel Kuro Uchi Gyuto 9.5″ or the Shun Premier Chef’s Knife 8″.

This might be obvious for some, but another factor to take in to consideration is that Deba knives are not suitable for thinly slicing fish.     I am a chef and this “Yoshihiro VG10 16 Layers Hammered Damascus Gyuto Japanese Chefs Knife” is exactly what I needed for my day to day work. The only issue I had is that my blade started chipping almost immediately after I started using it.
    A fellow chef assured me that it was most likely just the metal and not poor craftmanship. I am inclined to believe this as my other coworker has the same knife but with the blonde handle and his is perfectly fine.

    The knife barely needs to be sharpened and normally can be honed with little effort. It really is a nice piece. Thank you…
